The holidays are over! Yay! We survived! As nice as it was to spend time with my family, I couldn't wait to get home and start using all of my new Christmas goodies. I received new pots and pans, utensils, muffin tins, cake pans, and cook books! I am so stoked! There are sooooo many things I can make now!
Last night I made lemon salmon with garlic parmesan spinach. I love it, and it is so easy to make.
Ingredients for the salmon:
frozen salmon filets, thawed
cumin
adobo seasoning
minced garlic
lemon juice
Sprinkle the cumin and adobo seasoning on the salmon filets, and put in pan lightly coated with olive oil on medium/low heat. Put teaspoon of garlic on top of filets, spread evenly. Splash a couple of tablespooons of lemon juice over filets. Cook on each side, for about 15 minutes total depending on the size of your filets.
Ingredients for garlic parmesan spinach:
spinach
parmesan cheese
minced garlic
adobo seasoning
lemon juice
In a separate pan lightly coated with olive oil and heated on low/medium, put a couple big handfuls of spinach. (It might look like a lot, but the spinach will cook down.) As the spinach wilts, "fluff" or turn around in pan to evenly wilt. Sprinkle with adobo seasoning, and a few teaspoons of minced garlic. Splash with one teaspoon lemon juice. Before taking out of pan, sprinkle with parmesan cheese.
All that's left to do is enjoy!

A couple weeks ago my sister told me she was moving to Colorado, and let's just say that I will have a lot of free time on my hands when she leaves. To occupy my mind and time, I have decided to actually make those amazing craft projects and delicious recipes that I admire on my favorite website, Pinterest. Taco Fiesta Chicken Lasagna
First of all, this is a MONSTER of a casserole. It's huge, meaning it could feed a family of eight! It looks even bigger before you bake it. Like whoa. Easy to prep, harder to wait for! Here's what my outcome looked like:

Pizza Casserole!
My first attempt at a recipe that I stumbled upon on my beloved Pinterest was a success for the most part! I started out with a Pizza Casserole, mainly because the recipe was simple enough for me to remember after the first time reading it. I do wish I had put more pepperonis on it though...I think it needed a little more of a pizza flavor than a spaghetti dish flavor.

I was in such a hurry to try it, that I forgot to take a picture of my casserole, but mine looked similar to hers, except my pepperoni was smaller since I used turkey pepperoni. Still good, and made me feel better for using so much cheese!!! Nomnomnom!

New Beginnings
When my sister first told me that she was moving to Colorado with my brother in law and adorable niece and nephew, I honestly didn't feel anything. I was numb, and couldn't believe it. For 6 years, they have been my life, my inspiration, my laughter, my everything. I lived with them for 4 years, and spent almost every Sunday morning with them for family breakfast. My sister and I started spending Saturday mornings together this year in January, when we decided to pick up running to get in shape. Together we lost weight, and gained an incredible bond. I couldn't imagine my family not being 15 minutes away anymore, and I couldn't imagine not seeing them on the weekends.
Which brings me to this blog. I know I will be a wreck when my family moves, I already AM a wreck. I know that I will need to find something to do to occupy my time, the time that I would have normally been spending with my family on the weekends. My list of things that interest me include photography class, going back to school, and blogging. I came up with the idea to blog after I started learning to cook, and then I discovered Pinterest. Lightbulb!! I decided that I would occupy my time with projects and recipes that I found on Pinterest, and I would create a blog to journal about my experiences! So here is where my journey starts, and maybe anyone that reads this can enjoy the ride and get some sort of fulfillment out of my experiments and experiences in food, crafts, and whatever else I can turn into a project.
